This mayo is nothing like what you can get at your supermarket. It’s made of only three ingredients that your body can use. Eggs, lemon, and olive oil. Just like real mayonnaise should be. I will still suggest using it sparingly because even though it’s made with healthy olive oil, you still want to limit the amount of added oils in your diet. I always prefer to include oils by eating foods that naturally contain healthy oils and fats (nuts, avocados, etc.). But once in a while, snacking on some carrot sticks dipped in this creamy and nutritious mayo is just amazing!
If you read the ingredients of even the supposedly “healthy” mayo’s available at most grocery stores you will find something like the picture below.
This is the label from an olive oil mayo labeled as a healthier option than regular mayo. The ingredient list is frightening. Filled with things your body doesn’t need and will not be able to use. Eat too much of those ingredients and that’s and invitation for disease. Mayonnaise is something that I usually skip unless it’s homemade. It’s extremely easy to make and it’s done in less that 5 minutes so you can make it on the spot. I have stored it in a clean glass container in the fridge for about two to three weeks.
This recipe will be thicker if you use a high-powered blender to make it. When you use a regular blender you will sometimes get a runnier mayo. It will still taste delicious!

- 3 medium eggs at room temperature.
- Lemon drops to taste.
- 1 cup of olive oil.
- Optional: a pinch of sea salt.
- Put eggs, lemon drops (and salt if using it) in the blender.
- Start your blender in low setting and bring it to high.
- Open the small opening in the blender lid and slowly add the olive oil.
- Keep running your blender on high setting for up to one minute.
- Your mayonnaise should be creamy and ready to use!
