Cranberry Almond Quinoa

This is a delicious and easy to make option for breakfast or as a healthy side dish.
Recipe type: Breakfast or Side Dish
  • 1 cup of quinoa.
  • ½ cup of shaved almonds.
  • ½ cup of cranberries.
  • 1½ cups of water.
  • 1 bay leaf.
  • Cinnamon and salt to taste.
  • Optional: Add a handful of chocolate chips (70% cacao) for extra antioxidants, energy and deliciousness. Add these on top, when the quinoa it's already done.
  1. Soak the quinoa overnight in water.
  2. Drain the soaking water.
  3. Toast your shaved almonds in a pan over medium heat for a couple of minutes.
  4. Put all ingredients in a rice cooker and cook in the same way you would cook rice.
  5. You don't have to use a rice cooker. Just use the pot you usually use to make rice. Put all ingredients in the pot and bring to a boil. Reduce heat to medium-low and cook for about 15 to 20 minutes or until all water is absorbed.
