A basic tomato pasta sauce full of vitamins, minerals, fiber and nutrients that will make you feel and look great without compromising on taste!
Recipe type: Pasta Sauce, Gluten Free, Sugar Free.

  • 8 tomatoes cut in 4 pieces.
  • 1 onion cut in 4 pieces.
  • 8 garlic cloves.
  • 1 pepper cut in 4 pieces.
  • 2 dates cut in 4 pieces (soak them in water while the veggies are in the oven). Or you can use 1 tbsp of honey instead.
  • 1 tablespoon of olive oil.
  • 2 tablespoons of vinegar (balsamic or apple cider).
  • 8 basil leaves.
  • Oregano and rosemary to taste
  • Salt and pepper to taste.
  1. Oil a baking pan with the olive oil and place the cut vegetables (tomatoes, onion, garlic).
  2. Season with salt and pepper.
  3. Bake uncovered for 35 minutes at 350 F (180 C).
  4. Take it out of the oven and let it cool off a little.
  5. Put in the blender the baked veggies with all the juices along with the basil, rosemary, oregano, soaked dates (or honey), and vinegar.
  6. Blend everything together until you get the consistency you like.
  7. Taste and adjust salt and pepper.
  8. If you want a thicker sauce, you can cook at medium heat until the desired thickness is achieved. You can also add a little bit of water and cook it for 5 minutes if you want a thinner consistency.
